Ingredients:

2 Italian Squash, sliced

6 oz. Mushrooms. sliced

3 Medium Tomatoes, peeled

3 oz. Olive Oil

Salt & Pepper To Taste.

Directions: 

Heat oil in a sauté pan

Add squash, cook for 2 minutes

Add mushroom slices & tomatoes

Season with salt & pepper, simmer for 5-6 minutes more

Serve with a pinch of oregano.
